Field to Table Club Builds Awareness Along With Appetites
What started as a “kids in the kitchen” activity for days off school has expanded to become a year-round gardening and culinary program for young people. Field to table, or farm to table, is probably more familiar as a restaurant concept than a program concept, but both follow the same principle - knowing where your food comes from and being hands-on in its production.
The program, which currently consists of 18 students, splits its time between growing and cooking, with the facility at ArtsForward providing both a private room with grow lights to start the seedlings and a full kitchen to incorporate whatever is ready at each session into different recipes. Both instructors and students are demonstrably eager to get their hands dirty, whether that’s literally digging in the dirt to plant seeds or enthusiastically smashing garlic for a pesto. Not even clean-up is exempt from enthusiasm.
Yvonne Sisley, Administrator at ArtsForward, notes how students have already been showing how much more adventurous they’re willing to be with food when they’re the ones producing it. Every one of the eighteen students, for instance, was willing to try the very green wheatgrass smoothies, with seventeen of them admitting to enjoying them. They each take home plants after each session, and they’ve been talking about how much they’re looking forward to trying them.
The program expands beyond those basics. The local Men’s Shed has constructed planter boxes that will be installed outside ArtsForward as soon as the weather stabilises, and the students will be tending them right through harvest. Instructor Glenda MacPhee says that not only will they continue to meet all summer but will meet more often as produce continues to mature. Surplus food from the planter boxes will be available to community members, and a few of the more entrepreneurial students might also be using the plants they grow at home to set up at the farmer’s market.
In the fall, the program will move back inside the facility and repeat the cycle, starting some new plants but continuing to tend others through the winter under the grow lights.
The whole program is available at a very low cost to students thanks to a grant from Prairie Mountain Health’s Healthy Together Now grant, which not only covers most of the supplies and equipment but also an ASL translator for a deaf participant. It’s important, Sisley says, to ensure the program is available to everyone who wants to participate.
